Mango & Pineapple Sangria
Beat the heat with a
mango and pineapple stir. In a large
pitcher combine pureed pineapple and mango with Agave. Add to this a paste of
ginger, mint leaves, lime juice and salt. Add lemon zest. Stir and mix well.
Check for sweetness and garnish with mango pieces.
Mango Tomatilla Guacamole
Roast chopped and salted tomatillos in an oven for 20
minutes. Place them in a food processor once cooled and blend until
smooth. Combine with chopped
mango,
avocado,
jalapenos, garlic and onions. Add
seasoning as per taste and garnish with cilantro leaves. Serve with tortilla
chips.
Mango Chia Pudding
A tropical treat to beat the sun. Blend pieces of
mango in a
blender. Add yogurt,
coconut milk and lime juice to it. Blend until smooth. Add
honey for preferred levels of sweetness. Transfer to a bowl and stir with chia
seeds and refrigerate for 2-3 hours. Top with mango slices and shaved coconut.
